Dark & Stormy with Dehydrated Lime Garnish

Dark rum meets ginger beer meets a dried lime garnish that doesn't sink. Simple, bold, and always impressive.

The Dark & Stormy is one of the simplest and most satisfying rum cocktails you can make — dark rum floated over ginger beer with a hit of lime. It’s bold, spicy, and impossibly refreshing. Traditionally, you’d squeeze a lime wedge and drop it in, where it promptly sinks to the bottom and does nothing for the presentation. A Citrus House dehydrated lime slice solves that instantly. The dried lime garnish floats on the surface, nestled between the dark rum layer and the ginger beer below, adding a vivid green pop of color and a gentle lime aroma that enhances every sip. It’s the kind of small upgrade that makes a big difference — especially when you’re serving a crowd.

Ingredients

60ml Dark rum
Top Ginger beer
15ml Fresh lime juice

How to Make a Dark & Stormy

  1. 1 Fill a highball glass with ice.
  2. 2 Pour in fresh lime juice and top with ginger beer.
  3. 3 Slowly pour dark rum over the back of a spoon to float it on top.
  4. 4 Garnish with a Citrus House Dehydrated Lime slice — it floats perfectly.

Tips & Technique

The Dark & Stormy is all about the layering. Fill a highball glass with ice — the more the better, as it helps maintain the visual separation between the ginger beer and rum. Add 15ml of fresh lime juice directly over the ice. Top with ginger beer (Gosling’s is the traditional choice, but any quality ginger beer with real ginger bite will work). Fill almost to the top. Now take 60ml of dark rum and slowly pour it over the back of a bar spoon so it floats on top of the ginger beer. The result is a dramatic two-tone drink — golden ginger beer on the bottom, dark rum on top. Drop a Citrus House dried lime slice onto the surface. It floats perfectly, creating a three-layer effect that’s incredibly photogenic. As you stir and drink, the dehydrated lime garnish rehydrates slightly, releasing natural lime oils that cut through the rum’s richness. For batch Dark & Stormys at a party, dried lime slices are a game-changer — garnish 20 drinks in seconds.
